I actually was experimenting trying to make something else when this was created that was going to be like a orange chicken situation that this could totally lean towards if you add orange juice and stuff but I fell in love with this and felt this was worthy or sharing.

This can get a little onion heavy, if you don’t love onions, I however do. I am also currently am not kissing anyone so I say bring on the onions!!

If you truly wanted to you could turn this into a more authentic Katsu by pounding out the chicken minus the ginger and , using regular panko. I guess I made it a little bit KFC style by double breading it. or just skip it all and grill it! but you’ll love this, I promise!

Sticky Chicken Salad

Servings: 4-6

Ingredients

Extra Virgin Olive Oil (enough oil to shallow fry 1/4c or less should do it!)

1 ½lb Chicken breasts or thighs , salt and white peppered 

2 large eggs

1c flour 

1 1/2c panko (regular or coconut) 

1 tbsp ground ginger 

SAUCE:

3-4 cloves garlic, minced 

3 tbsp Soy sauce 

2 tbsp mirin

2 tbsp rice wine vinegar 

1 tbsp Sesame oil

1/4c sweet chili sauce 

1 tbsp Gochu jang 

8 oz Broccoli Slaw, Red onion slices 

optional: Bamboo Shoots, Bean sprouts 

Optional but recommended garnish: Lime, Green onion, Cilantro or Parsley

Directions

Begin by salt and peppering your chicken, to another bowl crack and scramble two eggs, and then to a different bowl add all the powders and whisk. Dredge the chicken in the flour, then egg and thennn the flour again and lay on a plate, then set aside. To a separate non dredging medium Bowl add all the sauce ingredients, whisk and also set aside. 

To a medium/large skillet or pan over medium heat, add olive oil to shallow fry the chicken in, when it starts to shimmer add the chicken, cook on both sides for about 5-6 minutes each. (until the internal temp of 165) when golden on both sides and remove onto a clean plate or bowl. Lower the heat (it's okay if it has some oil in it) but be careful pouring it in so not to splash hot oil on yourself or anyone else and in the sauce mix. It will start to simmer and turn into a hot syrupy sauce so don't go in for a sneak taste just yet, you can either toss the chicken in this sauce or pour it over the salad.

Next assemble the salad by adding the broccoli slaw and any other salad fixings. Along with the chicken and sauce, garnish with lime juice, cilantro or parsley, Enjoy!
