Roast With the Most

I hope it brings you as much comfort as it brings me and my family! Or maybe youll find a London boy for yourself! I’ll share what makes me smile…MAX! oh yeah, and this roast, Enjoy!
Shorty Rib Roast
Prep: 20mins Total 2 hours
3ish lbs short ribs bone in meat situation (approx 1359g)
Salt (at least a 1tbsp)
3 tbsp olive oil
Sweet yellow Onion, roughly chopped (170g)
6 ribs Celery, roughly chopped (600g)
1 Leek, washed roughly chopped (approx 200-250g)
1 Shallot (30g)
6 oz (170g) tomato paste
2 heads of Garlic (60g)
3 bay leaves
½ bunch rosemary (50g)
1/2 bunch thyme (50g)
2c red or white wine (296g)
1 tbsp whole peppercorns (10g)
32oz beef broth (907g)
2 anaheim or chile guajillo peppers (40g)
Serve with Mashed potatoes or the starchy situation of your choice!
Garnish: Garnish with green onion
Directions and Tips: If anyone who is local cooks with big game like bison or venison, This is your sign to make this is also great with both!
Let the meat come to room temperature before cooking.
Set oven to 350 degrees
Begin by seasoning all sides of the short ribs with salt
To a large pan over medium to high heat, add the oil, then the short ribs so that we can develop a nice crust on the outside. When you've browned all sides of the ribs(about 9-10mins), Remove them onto a platter while we prepare the rest of the dish.
Add the onion, celery, leek, shallot, and tomato paste. Cook until softened, about 8-10 minutes. Stirring occasionally.
When softened add the garlic, bay leaves, rosemary, thyme, wine peppercorns, peppers, and beef broth.
Give this another stir before adding the Ribs back in, The Short ribs will cook down in the sauce. Cover and roast for 1hr up to 2 hours. Check halfway through the cooking time to see if you need to add more wine or broth. Serve with some more veggies, all the fixins’ and some yorkshire puddings or maybe a dinner roll is more your speed, either way, enjoy!
