Mortadella & Pistacchio Pesto Sandwiches

Mortadella & Pistachio Pesto Sandwiches, this is inspired by one of my friends Casey! She and her husband came to help me move and im so thankful for her, and so excited to be living closer to her! She Lovessss pesto and Pistachios and a good ol’ mort! it was truly meant to be! and very Emily in paris of us.


Serves:2-4 people for a lovely picnic

Time:15 minutes total


Small Foccaica (10-11oz) cut horizontally 

3/4c Pistachio Pesto or you can just use storebought pesto! (Recipe below) 

4ozMortadella 

3-4 Burrata balls 

1/4c Pistachios, chopped

1/2c black berries or strawberries,roughly chopped or sliced

1-2oz Freshly grated parmesan

Drizzle on a layer of Hot honey or balsamic glaze

Handful of chopped,Mint and basil 

1 1/2c arugula or mixed greens 


I recommend Serving with a ginger ale because it wraps it all up altogether! its fresh and simply refreshing

Pesto:

3/4c pistachio, 6-8 cloves garlic, 4c packed basil, 1c parm save the knob for some soup or something,1/2tsp salt,¾ good quality olive oil,-Optional 1tsp red pepper flakes for a little heat

Add a little splash of lemon juice if youve got some!


Roast your nuts and garlic real quick in a dry pan over medium toss occasionally, just to prevent burning. or in the oven for like( 5 minutes on 350) until they’ve warmed up, add everything to a food processor and blend for 5 minutes until smooth. Store in air tight container up to week in the fridge (if you dont use it all for this recipe)


Tips: Other ways Ive also been testing this recipe:you can also turn this into a wrap using some pizza dough as a tortilla situation, make it into a grilled cheese or try frying the mortadella like bologna, its going to be soo good! And youll love it! 


Begin by making the pesto, then set aside, separate the top half of the bread from the bottom, to the bottom layer, start by adding the Mortadella, followed by the burrata, cut the cheese into ¼’s and spread it to the best of your ability, add the chopped pistachios still in nut form, dollop about 1/4c worth of pesto on the cheese, layer and spread the rest on the top  piece of bread. Next add the berries of choice, followed by some parmesan, hot honey or balsamic, a layer of fresh herbs, then greens, top the sandwich, cut into more pieces or take home a hero, Enjoy!
