No Bake Monster Cookie Bars

 come out of my shell!? But of course….

I’ve been making these NO BAKE Monster Cookie Bars for 9 weeks in a row.. Just saying!

This makes 18 small bars or 9 medium-sized bars 

Ingredients:

1 stick melted unsalted butter 

1c old fashioned rolled oats 

1c peanut butter 

3tsp vanilla extract 

2c powdered sugar 

½c mini m&m’s or chocolate or cute coated candy of your choice 

½ mini marshmallows (the kind for hot chocolate!)

1c (or more) chocolate chips ( this is also great with dark chocolate)

Optional: flaky salt for garnish 



To a 7x11” casserole dish, line with parchment, use the clip trick I taught you (if you want) 

To a large bowl, add the butter, then melt the butter in the microwave for 1 minute or so, remove from the microwave, add the rolled oats, peanut butter, vanilla, and powdered sugar, mix and fold with a silicone spoonula, until thickened, it will be a light peanut buttery color. Pour in the mini m&m’s and marshmallows, mix until they are well distributed (so theres some in every bite!) Add this mix to the bottom of the parchment lined casserole dish, and press until you have an even surface.

In the meantime melt the chocolate on 15-30 second intervals until easily mixed with a spoon, spread the chocolate on a thin layer over the top, or make some swoopy chocolate waves! Garnish with a sprinkle of maldon (flaky salt) and chill in the fridge (ice box or freezer!) for 2-3 hours, cut, serve and Enjoy! (1hr in the freezer) store covered, in the fridge until ready to serve or leftovers
