New Year’s Eve Soup
Ladel in the New Year with my all time favorite soup! For yourself or someone else you mostly like ❤️🫶 This year was really challenging for me, full of highs and lows and hoping for the best to come! Cheers! 🥂
NYE SOUP (Creamy Tortellini Soup)
Inspired by my internet popular pasta!
Serves 6-8
Prep: 10 minutes total :45mins
1 jar of sundried tomatoes, reserve oil, and slice tomatoes into strips.
1 onion, chopped
4 shallots, thinly sliced
2 lemons, zested and juiced
Salt and Pepper to taste (I used about 1tbsp of salt)
1 tube of sundried tomato paste, I prefer @amorebrand but you can puree a jar if you can’t find this
1lb ground protein, I used 90ish% ground beef or spicy italian sausage are my fav
1tbsp basil
1 tbsp oregano
1tbsp Italian seasoning
1-2 tsp red pepper flakes/more if you like spice, plus more for serving
2 cups of spinach
1c dry white wine (whatever you have) the rest is for drinking.
1-2 cartons (32oz)Low sodium chicken broth
2 (20oz) packages of premade tortellini or homemade ( I recommend cheese or mushroom)
1/2c - 1cup heavy whipping cream
1 knob of leftover parmesan rind or 1 cup-ish of grated parmesan, plus more for serving
Garnish:
Fresh parmesan flakes
Roughly chopped parsley or basil
Sprinkle of red pepper flakes
Serve with garlic bread or something good for dipping
NOTE: If you are making the larger portion of this, you're going to need your largest pot! & there are two types of soup ppl.. brothy ppl and creamy ppl. I planned for both with this recipe
In a large pot over medium heat, add your oil, onion, shallot, sliced tomato, lemon zest and juice, tomato paste, and preferred protein, making sure everything is fully cooked ( about 10 -15 minutes), add your seasoning, spinach, and toss, turn up the heat, pour in the wine if using and cook for 5-10 minutes until the alcohol simmers out, then add the broth and parmesan cheese rind. Bring to a simmer or slight boil (basically, until you can no longer find the rind. Then were ready to add in the pasta. Cook to package instructions, while those cooks add in the cream and stir. When the pasta is ready, you're ready to eat! Serve up a bowl, top with extra cheese, fresh herbs, and more red pepper flakes if desired, and Serve with bread. Enjoy!
The pasta will continue to soak up the broth - so keep that in mind for storage- for people wanting to freeze this - make it up to the point before adding cream and the pasta and wait to add those when reheating. Enjoy! Happy New Year!
