Swed-ish Meatball Sandwiches

Swedish Meatball Sandwiches inspired by the Minnesota State Fair

Serves 3-4 Prep:10 minutes Total:40 minutes 

4 tbsp Butter (divided)

1 package of Pretzel buns or homemade

Meatballs:

1 pound spicy Italian sausage, 1/2c bread crumbs, 1 egg , 1 large yellow onion, minced,(½ onion for the meatball,½ for the sauce) divided in half, ½ teaspoon caradamom or cinnamon, ½ teaspoon white pepper, 1 teaspoon ground ginger, ¼ tsp All spice, Fresh ground nutmeg 

For the sauce:

½ onion (remaining onion)

1 Shallot, finely chopped 

3-4 cloves Garlic, minced 

3 tbsp all purpose flour 

1 tbsp stone ground or dijon mustard 

1 tsp dried Dill

½ tsp all spice 

Freshly grated nutmeg 

1c Sour cream or Greek yogurt for garnish 

2c Beef broth 

Salt and pepper to taste 

1 tsp Worcestershire sauce 

Havarti or Munster cheese slices 

French fried onions 


Optional but recommended sandwich toppings, Lingonberry jam, Horse radish, French fried onion/crispy dillies and Parsley

To large bowl, add the sausage, bread crumbs,egg,1/2 onion, seasonings, salt and pepper to taste. combine this and roll into little balls, about the size of your pointer finger and your thumb, you can either bake these or make them in the pan with everything else! 


To a large pan or skillet over medium heat, add about 1tbsp of butter and begin to toasted the bread,remove onto a clean plate,add some olive oil,followed by the meatballs, and the renaming onion to start caramelizing, cook the meatballs on all sides about 10-15 minutes) and spread out the onions so they cook faster, remove the meatballs from the pan into a clean plate or dish,  store in a warm oven (about 200 degrees) or in the microwave, add the shallots and garlic, and the remaining 3 tbsp of butter to coat, followed by the flour. Add the mustard and seasonings, then the sour cream and broth. Whisk until thickened then reduce to a simmer about 10 minutes, add the worcester sauce, then add the meatballs back in to coat, 


For assembly, get your buns, add a smear of horseradish if using, followed by the cheese, then a couple meatballs, plus some more of the sauce, add some lingonberry, top with french fried onions or crispy dillies, fresh parsley, serve and enjoy!
